Apricot Dijon Laquered Chicken Thighs

I realize that I haven't posted on my blog for a bit, but I have been posting new videos to my YouTube Channel weekly. Please click here to view the recipes you have missed! I am going to write the full recipe in the description of each video. Please subscribe so you don't miss any! I needed an idea for how to use apricot preserves with Dijon and chicken and found a recipe from Martha Stewart called Apricot and Dijon glazed chicken thighs... the only thing is, it required too much work and contained a whole jar of apricot preserves [...]

CHANGUA – Colombian Egg Drop Soup and Hangover Cure

Changua is a Colombian egg drop soup from the Cundinamarca and Boyaca regions of Colombia where it is colder than the rest of the country. It is typically eaten for breakfast and the entire country enjoys it as a hangover cure, even the children. It is crazy. I have been eating Changua my entire life and loving it. The original recipe calls for equal parts milk and water with egg, green onion, cilantro, oil, salt and is served with crusty white bread. It sounds a little strange, but I think it is quite an elegant dish. It is also very [...]

Video and Post: Easy and Sexy Farro Salad

Farro is an amazing and sexy ancient grain that happens to be delicious, easy to make and good for you. I wrote a post about it once called, "If Sophia Lauren was a grain." This Farro salad with Kalamata olives, crumbled goat cheese, cucumbers, currants, pine nuts, tomatoes, lemon juice and basil is incredibly tasty and impressive. You may use chopped cherry tomatoes or little grape or pear tomatoes. I indicate in the video to cook the farro for 15 to 20 minutes, but in my original post, 20-30... I would taste after 15 and add time as needed. Farro [...]

Video & Post: Oyster Mushrooms with Garlic and Chili Pepper A.K.A Setas al Ajillo

I need to write a book entitled, "100 things I have to thank Spain for" and number 4, would be for introducing me to the simplicity of "Setas al Ajillo" a.k.a sauteed oyster mushrooms with garlic and a little chili pepper. Gambas al ajillo is probably number 7 after that, a.k.a sauteed shrimp with garlic and a little chili pepper. I am mostly afraid of buying and cooking mushrooms. I give into the sticker shock of how expensive good mushrooms are and the insecurity of not having a lot of experience with them. In Spain, setas al ajillo is a [...]
