CHANGUA – Colombian Egg Drop Soup and Hangover Cure

Changua is a Colombian egg drop soup from the Cundinamarca and Boyaca regions of Colombia where it is colder than the rest of the country. It is typically eaten for breakfast and the entire country enjoys it as a hangover cure, even the children. It is crazy. I have been eating Changua my entire life and loving it. The original recipe calls for equal parts milk and water with egg, green onion, cilantro, oil, salt and is served with crusty white bread. It sounds a little strange, but I think it is quite an elegant dish. It is also very warming and satisfying. I had never made it myself because my mother always made it for me. It wasn’t until I decided that I had to share it with you that I forced my mother to break down the exact recipe and technique. It wasn’t easy. The recipe and technique, however, are super simple. I hope that you are daring and try this. If you like egg, green onion and cilantro, you will love this simple soup.

Recipe for Changua: 1 serving

1 egg separated
1-2 green onions
3 T cilantro
1 cup water or chicken stock
1/2 cup milk
salt
1 T olive oil
Crusty bread… French bread works nicely

Combine onions, cilantro, water/stock and oil in a pot
Heat on medium and bring to a boil
add egg white and stir
Beat egg yolk(s) with milk
Lower heat on soup to low
Add yolk/milk mixture and stir for 1-2 minutes
Add salt and taste
serve over torn up crusty bread
