Baked Parmesan Chicken Bites

I have a love/hate relationship with chicken nuggets. I hate that America stuffs their children with terrible mystery nuggets and I love to eat these mystery nuggets or their close cousin the finger of chicken. Who knew chickens had nuggets and fingers? I have solved this love/hate problem by coming up with a way to make a wholesome chicken nugget that tastes like you are going to hell or at least Jenny Craig, but is actually not that bad for you. Baked Parmesan Chicken Bites 6-8 chicken tenders cut into 3-4 chunks (Trader Joe's sells a pack of frozen/glazed tenders [...]

Apricot Dijon Laquered Chicken Thighs

I realize that I haven't posted on my blog for a bit, but I have been posting new videos to my YouTube Channel weekly. Please click here to view the recipes you have missed! I am going to write the full recipe in the description of each video. Please subscribe so you don't miss any! CHANGUA – Colombian Egg Drop Soup and Hangover Cure

Changua is a Colombian egg drop soup from the Cundinamarca and Boyaca regions of Colombia where it is colder than the rest of the country. It is typically eaten for breakfast and the entire country enjoys it as a hangover cure, even the children. It is crazy. I have been eating Changua my entire life and loving it. The original recipe calls for equal parts milk and water with egg, green onion, cilantro, oil, salt and is served with crusty white bread. It sounds a little strange, but I think it is quite an elegant dish. It is also very [...]

Guiso Colombiano – A.K.A The holy trinity. -Video and Post

I am Colombian. Even though my food influences come from all over the place including Spain and New Mexico, my last meal on earth would star at least 3 Colombian dishes in the top three courses. And in case you are wondering, my last meal on earth would consist of a lot of courses because I could never decide on just one dish. I designed a menu once for a restaurant in LA called La Fonda Antioqueña. This used to be one of my "regular" spots when I lived in LA.The funny thing is that they never asked me to [...]

Video and Post: Easy and Sexy Farro Salad

Farro is an amazing and sexy ancient grain that happens to be delicious, easy to make and good for you. I wrote a post about it once called, "If Sophia Lauren was a grain." This Farro salad with Kalamata olives, crumbled goat cheese, cucumbers, currants, pine nuts, tomatoes, lemon juice and basil is incredibly tasty and impressive. You may use chopped cherry tomatoes or little grape or pear tomatoes. I indicate in the video to cook the farro for 15 to 20 minutes, but in my original post, 20-30... I would taste after 15 and add time as needed. Farro [...]
