I have never tackled potato salad because I felt that it was something that should be left to the veterans.
It just happens that I have reached an age in which mu mu’s seem pretty comfortable and that I need to have my own potato salad recipe.
I love elements of German, Colombian and Potato salad, so, like Dyson and his vacuum cleaners, I set out to invent, The Perfect Potato Salad.
I think that a great potato salad should make you want to get up at three in the morning, grab a fork and eat it straight out of the tupperware, perhaps with a few crumbled potato chips on top.
Claudia’s Perfect Potato Salad
THE NITTY GRITTY
4-5 medium waxy potatoes, peeled, chopped and boiled 20-30 minutes with a ton of salt .
2 eggs hard-boiled and chopped
3-4 scallions chopped
5-10 slices of crisped bacon chopped
2 T curly parsley minced
3-4 hearts of palm chopped (or fresh blanched peas… for texture)
THE MAGIC DRESSING
1/4 cup Mayo
1/2 cup non-fat Greek yogurt
1.5 T Dijon mustard
1.5 T whole grain mustard
2 t sugar (I use raw and organic from Trader Joe’s) key ingredient
1 T white vinegar (or a little more)

You may also add a sprinkle of cayenne pepper if you so desire.
