Do you have a jar of artichoke hearts in your pantry that you don’t know what to do with? Do you love capers? Well, then, read on. I threw this dish of chicken with marinated artichokes, capers and lemon together after Googling what to do with this jar of artichokes I had in the fridge. I have made this dish three times in the past month because it is so delicious and so easy. I love to use frozen and ice-glazed chicken tenders from Trader Joe’s because they take 20 minutes to defrost in a bowl of cold water and they are way more tender, as their name would indicate, than the breast that houses them.
I served this dish with Casarecce pasta even though I don’t show it in the video. Casarecce pasta is wonderful with any sauce, but it is great with chunky sauces of any kind.
This video is my ode to Sandra Lee. She made the concept of semi-homemade famous. I really admire that she is self-made and someone who is always giving back. Many people don’t know that about her.
20 years ago, it was difficult to make semi-home made food that was wholesome as most pre-made food contained tons of preservatives, sodium and artificial stuff, but nowadays the pre-made sauces that you get at Trader Joe’s, Whole Foods and specialty stores contain only the real ingredients and make it easy to whip up a really delicious dish in half the time.

You will need: Serves 2-3
1 Sautée pan
10-12 Chicken tenders chopped or 2 breasts chopped
1 8oz jar marinated artichokes – drained n chopped
1-2 T Capers
Juice 1/2 lemon and rind
1/4 cup white wine
a little less chicken broth
Olive oil & a little butter
Freshly ground pepper
Great over Casarecce pasta
